A roasting tin of goodness: One-Tin Baked Sausages and Veggies
I learnt to cook this way from Rukmini Iyer’s Roasting Tin cookbook series (ad - affiliate link); I had just moved into a flat alone for the first time, after 5 months living somewhere I didn’t feel comfortable using the kitchen. I was re-learning how to feed myself, and this time without a freezer, toaster, or microwave - so all my old standbys from my student days wouldn’t work.
But I gradually learnt that I could combine a bunch of things in a roasting tin, add flavour, and cook it in the oven, and then come back day after day until it was gone. And that’s how I came up with this.
